Light choc sponge/cakey thing

Hey guys,

Does anyone have a recipe for a sponge or cake like chocolate mix that I can cook and use as a base for a desert?
Going to layer choc mousse and strawberries on top so it needs to be light and preferably around an inch or so thick

Suggestions?

Been making the one from the Edmonds book for years. Called 'One egg chocolate sponge' - easy, always works, light and chocolatey. Don't think you'll be disappointed. Nice idea for a dessert too, think I'll copy it. lol. yum.

Sponge Foundation (Aunt Daisy)

1 egg
1 heaped cup flour
1TBSP cocoa
1 oz butter
1tsp b/powder
1TBSP boiling water
1/2c milk
1 teacup sugar
pinch salt

Beat eggwell, gradually add sugar & keep beating. Add heated milk & butter. Fooldin dry ingredientsvlightly with a fork, lastly add water. Pour into 2 greased & floured sponge tins.

Bake mod oven

Chocolate Sponge Cake...

• 4 eggs,
• 3/4c caster sugar,
• 1 c of flour,
• 2 T cocoa
• 1 tsp cream of tartar,
• 1/2 tsp bk soda,
• 1/2 c milk,
• 1 tsp butter,

Cream and jam.

Beat eggs with electric beater till thick.
Add sugar 1 T at a time till mix is pale & thick.
Discard 2 T of the flour.
Sift together the flour, cocoa, cream of tartar & baking soda 3 times, this makes a light fluffy sponge.
Sift over the egg mix and fold together until almost combined.
Heat milk & butter till butter has melted.
Pour this mix gently into the rest and fold together. spread batter into 2 20cm round tins that have been greased & floured & lined with baking paper.
Bake each cake for 20-25mins @ 200°C.
Cool on racks
