How do I make my sponge topping light & fluffy "like my Mum used to"? Mine turn out firm & slightly heavy.

Sponge pud through a child's eye?. lol . Do you have the fruit boiling hot before putting the sponge on top ? Keep making them, Practice makes perfect you know. enjoy
