I steam them and serve with either a cheese or onion bechamel sauce. I use a good, strong cheese to give good flavour. The onion sauce I do with Sauteed onions done in butter first, before adding them to the bechamel sauce. A dash of salt and a good dash of freshly ground pepper.

You are wlcome. I do find them quite "sticky" when peeling them and try to peel while running them under cold water.

That's a good idea. They are sticky little beggers, along with the butternuts sometimes.

I've seen previously here that they can be roasted - though haven't tried doing so. Slice and add to stirfry veges, or to a potato bake.
