Check out the nzcheesemakingschool. I have just done a course with them here in Hawkes Bay, not cheap but well worth it. The do courses all over NZ so check out theirwebsite. Getting all the extra info while attending a workshop is what I found very helpful, this what you miss buy just following instructions from a book.

I've got the Artisan's One Day Kit and it's great.It has already more than paid for itself with the feta, haloumi, mascarpone, ricotta and creme fraiche that I've made, and it has everything you need.I did buy a better thermometer than the one supplied.
