I just bought some baking dishes from farmers - planning on making some lasagne etc and freezing it (lining dish with foil, freezing then taking it out of the dish and wrapping it up) but just noticed it says, oven, dishwasher, microwave safe. Doesn't say freezer safe though. Would you assume these would still be ok in the freezer!

Not necessarily. I would take them back and ask them before using them in the freezer and ask them.You would probably be better off paying a little more and getting Pyrex dishes for this purpose or a good quality culinary ceramic like Revol.
