mmm, not sure on this one.Why not make up a small lot and see how it turns out.
Sweat the Kamo Kamo with plain salt, 2 tsp of salt per Kamo Kamo, for three hours, don't rinse just discard the juice. Cook along with; A few dates, ch. onion, a can of crushed pineapple, spices to taste. I would add the spices in small lots. 2 or 3 cups of malt vinegar, simmer all untill nice and thick. I doubt if it will need much sugar, if it dose, add brown sugar. Please understand this is from my head as if I was making it. If sauce, chutney, pickles do not turn out that well, use up in meat dishes, soups, gravy, etc. You will find the spices and the other ingredients will not be detected, as the failed sauce. lol.

A lovely change for chutney, I must try this recipe.
