Why did my sponge

turn out beautiful looking, but once tasted was too dry to eat! Did I do something wrong, or need a better recipe! Is it better without the cornflour!

Maybe over cooked!don't know recipe you used but one on fielders cornflour pkt is reliable. In my sponge making days always used recipe with cornflour for light fluffy sponges to fill with cream, jam, jellys etc.
