Made for tomorrow !00gr butter 3/4c Condensed Milk 1c finely chopped apricots 1/2c finely chopped crystallised ginger 1c desiccated coconut 1tsp gr ginger 2TBSP lemon juice Pkt plain crushed biscuits Base: place butter & cond milk in a suacepan & heat gently until butter melts. Remove from heat. In another bowl mix apricots, ginger, coconut, gr ginger & lemopn juice. Add crushed biscuits & combine Add butter & cond milk mixture, stirring well. Press into a tin & chill until set. Icing: 50gr butter, 3TBSP boiling water, 1tsp lemon juice & 3&1/2c icing sugar Spread over base & garnish with crystallised ginger & chopped pistachios (opt)
