Hi Robin, I am looking for a really good one too. I must add though that I always use the NZ Otago apricots, as the Turkish ones don't have the taste or tang.I had some frozen cherries which I sugared and boiled up, going to use thoseas well.I used to have a really good one which was all mixed in the bowl together, no eggs or butter - was the best !

Cream shortening, gradually add sugar; cream until flurry; beat in yolks 1 at a time; add vanilla. Sift dry ingredients; stir in alternately with water and pulp. Bake in greased and lined 8x8x2-inch pan at 350°F.about 45 min

Either, either - butter or Olivio. I always use butter in baking.
