Does anyone have a recipe for the fruit loaf you can get that has tea in it? Thanks.

Sultana Tea loaf
This was posted previously by campmum.
Soak 1&1/2 cups sultanas in 1&1/2 cups strong tea (about 6 teabags) for 1 hour or overnight.
Add 1 egg, 1/2 tspn salt, 1&1/2 cups flour, 3/4 cup sugar, 1 heaped tspn baking powder. Bake in loaf tin 1 hour @ 180*C.
Mix should be sloppy, if soaking fruit overnight, add a little more cold tea if required.

Alison Holst Sultana Tea Bread
1c sultanas 1tsp mixed spice 1tsp cinnamon 25g butter 1c hot tea 1c brown sugar 2-2 1/4c self raising flour
Measure sultanas, mixed spice, cinnamon and butter into medium bowl. Pour over hot tea, recently made and leave to stand until cold. When cooled add brown sugar and self raising flour. (If you use 2c the loaf will be cake-like and moister; whereas 2 1'4c will give you a larger bread-like loaf). Mix only to dampen, sugar and flour, overmixing will toughen loaf. line a 23x12cm loaf pan and bake 1 hr or until skewer comes out clean. 180 c.
