Does anyone have an easy to follow/hard to screw up recipe for Carrot Cake!

Just follow a recipe precisely, and to have all ingredients ready to go.

Here is one very simple recipe from a very young English lady nearing 90's, by Doree36.

Carrot Cake Lovely moist.

75 grams butter,
1 1/2 cups brown sugar, make sure this is firmly pushed into cup when measuring,
1 150gram pot sour cream.
3 eggs preferably size 7,
1 cup plain white flour,
1 1/2 teaspoons baking soda,
1 teaspoon mixed spice,
1 1/2 teaspoons cinnamon,
1/4 teaspoon salt,
3/4 cup wholemeal flour,
2 cups grated carrots - once again firmly pushed into cup when measuring,
1/4 cup raisins (some say about 1/4 cup walnuts into currant size pieces too if you wish).

CREAM CHEESE ICING
1/2 cup cream cheese,
1 tablespoon butter,
1 teaspoon vanilla essence or lemon juice,
2 1/2 cups icing sugar sifted.

Soften butter, beat in sugar, add sour cream and eggs and beat thoroughly.
Sift flour, baking soda, mixed spice cinnamon and salt.
Add wholemeal flour.
Fold into sour cream mixture add grated carrots and raisins and nuts.
Put Into greased and lined all sides with baking paper - 20 cm square cake or 23cm round tin.
Bake 180c for about 1 hour, check if cooked by inserting a wooden skewer into the cake near the centre and pull out and all is crumbly sort of cook moist, not liquid sticky batter stuff.
When cold, ice with cream cheese icing.

CREAM CHEESE ICING
Beat cream cheese until soft.
Add softened butter and vanilla or lemon juice and beat well.
Gradually bet in sifted icing sugar until smooth.
A really Super Cake - I have won many cooking competitions with this cake.

its got no baking powder in it! Doesnt wholemeal flour need bp!

This recipe does not need baking powder, it does have baking soda in it though, only use that.

Also PLEASE do not crush Walnuts if adding to the mixture, leave it in chunks.

If crushed then the wee finer bits become like "Ground" - extra floury likeness that will give a dryer texture that is not wanted.
Pieces of walnut does give a nice extra taste within though.

Keep this in mind if adding walnuts.

this is the easiest and yummiest carrot cake reciepe around. Its from a highcountry station cookbook.

1 c oil
2 c flour
2 t baking soda
3 eggs
1 c coconut
1 cup of walnuts
1 c raisins
2 c sugar
2 t cinnamon
2 t vanillas ess
1 t salt
2 c grated carrot
1 cup of crushed pinapple.

Put everything in a large bowl, mix through and put in lined and greased cake tin. 180.c for 1 hour. cream cheese icing on top.

Always get asked for the reciepe.

Sorry for the capital letters.cut and pasted. This is a delicious moist easy cake that everyone always wants the recipe for.

4 EGGS2 TSP CINAMMON
2 C SUGAR1 TSP MIXED SPICE
1 ¼ VEG OIL2.5 C GRATED CARROT
2 C FLOUR432G CRUSHEDPINEAPPLE
2 TSP B. SODA1 C CHOPPED WALNUTS
2 TSP B. POWDER
PREHEAT OVEN TO 180
BEAT EGGS, SUGAR& OIL UNTIL DISSOLVED.
COMBINE FLOUR, BAKING SODA, POWDER & SPICES.
STIR INTO SUGAR MIXTURE.
STIR IN CARROT, PINEAPPLE & WALNUTS.

POUR INTO 20CM TIN
BAKE FOR 1 ¼ HOURS OR UNTIL COOKED.
LEAVE IN TIN FOR 15 MINS BEFORE TURNING OUT.
DECORATE CAKE WITH CREAM CHEESE ICING AND CHOPPED APRICOTS AND PUMPKIN SEEDS

thanks Valentino for putting my great carrot cake on again.Actually I am a Kiwi Girl (Taumarunui born) and i will be 76 next month.It is a great cake and actually came from a "Country Goodness" bookof years ago when Carrot Cakes were coming in as "the" cake to make. Have not made it for a while but your posting has given me the motivation to make one Cheers!

I've got one of these in the oven - I used an 8"expanding tin fully expanded.Probably could have made it slightly smaller but I think it will be fine-will just watch cooking time.
To make it even easier, I chucked peeled carrots into the food processor and chopped finely before adding the other wet ingredients.I then popped in the walnuts and pulsed till a little chopped and poured it all over the dry ingredients in my Kenwood.Hardly took any time - thank goodness for dishwashers though!

Smells good tinawai - I'm not going to cut it until tomorrow though.Looks pretty much the same as the carrot cake we used to make in our coffee shop although ingredients vary slightly.Will let you know tomorrow.

Hi, great to see you are still around, yeah, you are nearing the 90's being positive but in reality - you have not gone passed 29 yet.just letting othersknow you are still here.

And I for one loved these olden days recipes where all ingredients are wholesome and natural and did not have oil to give that moistness.
