Well, you might have coconut-flavoured evaporated milk, or maybe just use cream!

My cupboard is so well stocked with 3 or 4 cans of everything except any of the above. I did find a nice chicken tonight butter chicken so if I cook it quick enough my husband will think I have been slaving all day in the kitchen as well as wrangling the kids!

Do you have coconut? Soak in water then squeeze, there you have coconut milk.
Another option is Evaporated milk, with coconut essence. Don't know the difference.

I do it with yoghurt, cos I loathe coconut. Yum...
