I have a lovely coffee liqueur Eggnog recipe. Eggnog is made with eggs, cream, brandy etc. This one is using Kahlua ( one of my favourites) 4 eggs, separated 75g caster sugar 500ml hot milk 160ml Kahlua 125ml cream
Place egg yolks, sugar and milk in a large heat proof bowl over a pan of simmering water, whisk for about 15 minutes until mixture lightly coats the back of a spoon. Remove from heat, stir in liqueur, cover and refrigerate 1 hour. Beat cream in a small bowl until soft peaks form;fold into liqueur mixture. Beat egg whites in small bowl with electric beater until soft peaks form; gently fold, in two batches, into the liqueur mixture. This makes about 1.5 litres.
