I make this one and love it! You can bump up the seafood by using prawns and white fish if you want, but it's very quick this way, and so filling!

CURRIED PRAWN & SWEETCORN CHOWDER
100g Butter
1 Finely Sliced Leek
2 Tablespoons Flour
1 Tablespoon mild curry powder
1 Cup fish stock (use the liquid drained from the fish fillets,
topped up to 1 cup with water)
2 Cups milk
1 Potato, peeled and cubed into pea-sized pieces
2 Cups sweet corn kernels (Use frozen supersweet kernels but
canned or fresh are fine)
310g Can smoked fish fillets and other mixed seafood as desired.
Surimi, mussels, prawns, shrimps etc
Salt and lots of freshly ground black pepper, to taste
2 Tablespoons chopped parsley (approx)
Heat the butter in a large saucepan and add the sliced leek.
Stir-fry for two to three minutes, then add flour, curry powder and stir well. Slowly, while stirring, add the fish stock and milk. Add the potato, sweet corn, smoked fish and prawns. Gently simmer for 20 minutes, until the potato is cooked and the soup is thick and creamy. Add extra milk if the consistency is too thick. Season to taste with salt and freshly ground black pepper. Sprinkle with chopped parsley to garnish. Serve with a basket of crusty white rolls for a substantial meal in a bowl.
