Have you heard of a french wedding cake? ? Basically they are lots of little cream puffs and they are piled on top of each other (with a filling inside each one of them) and a nice toffee is poured over them.

My cream puffs actually turned out quite large, i didnt realise how much they puffed up. Edmonds recipe made 40. Thinking of cream and icing sugar, or perhaps choc icing squiggled over a large pile. . would like to see some pics for inspiration.

bumpin pls

they should be crunchy, they sog up a bit once the filling goes in if you leave it a while before eating.
A nice pile with icing sugar looks ok, but yes, some choc drizzled would look great.

Thankyou 245sam - I had forgotten how to spell croquembouche! I have made some for celebrations though and they always look great.

stack or arrange as you like. Place lolly mint leaves around with say strawberries or grapes. And to be naughty, a few marshmallows! ! hehehe
