Chowder bubbling over

hey all! Just after some advice :)i made a 20L Bucket of chowder, once it was put in the Chiller it started to bubble/ferment it occasionally does this.

What i would like to know is what causes the bubbling as it goes off if left overnight.

bacteria growth!

20L is a large thermal mass that will cool slowly promoting bacteria growth.Perhaps try chilling in smaller containers as it will speed cooling.

You may have put it in the chiller, when it was still warm.!

i have a feeling your right, i made it at work and when i left one of the other chefs put it in the chiller. When i was told about it i went in before they chucked it out and upon stirring it it was still quite warm in some parts after about 6 hours it still wasn't cooled and solidified.
