You will need a loaf tin or terrine approximately 10 x 12cm and a sheet of greaseproof paper.
Set the oven at 200ºC/Gas 6. Tear the bread into rough chunks and put into a dish with enough milk to cover. Leave till the bread is thoroughly saturated with milk. Put the mushrooms in a small bowl and cover them with warm water.
Slice the leeks in half lengthways and then into small dice. Wash thoroughly in a colander with cold, running water.
Melt the butter in a deep pan, then add the leeks and the chopped parsley. Leave them to soften over a low heat. The leeks should not colour. I prevent them browning by placing a disc of greaseproof paper over the leeks, so that they partially steam.
Remove the leeks from the heat, add the beef and the bacon, diced into small pieces. Leave the meat to brown nicely on the underside before stirring. Add the chopped garlic and the mushrooms, drained of their soaking liquid and roughly chopped. Wring out the breadcrumbs and stir into the mixture with plenty of salt and pepper and the grated parmesan.
Push the meat into the lined tin and smooth the top flat. Fold the paper over the top and place the tin in a roasting tin. Pour hot water into the tin, to come halfway up the meatloaf. Place the roasting tin in the oven, and leave for an hour until fully cooked through.
Leave to settle for 10 minutes before turning out and carefully slicing.

Sauce: 1 chopped onion, ¼ cup water, ½ cup tomato sauce, ¼ cup dry red wine, ½ cup water, ¼ cup L&P Worcestershire sauce, Salt and pepper 2 tbspns vinegar, 1 tbspn chopped parsley, ½ teasp instant coffee. 1 beaten egg, ¼ cup brown sugar. 1 clove garlic, 28 grms butter, ½ cup milk,teasp lemon juice Reheat oven to 170oC.Combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and beaten egg in large bowl.Mix well. Mix milk and water and add to meat mixture a little at a time until smooth but firm. Line loaf pan with tin foil or doubled baking paper. Put half mix in pan and lay eggs end to end down centre or cover with bacon, Cover with remaining meat mixture.Bake 30 minutes while making sauce.Pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce. Serve loaf hot in thick slices with remaining sauce. Sauce: Saute onions in butter until golden and add all other ingredients. Bring slowly to a boil, lower heat and simmer 10 to 15 minutes.

Throw in a bowl a packet of mince, a tube of sausage meat, an egg, some rolled oats, chopped onion, salt, pepper, sweet chilli sauce, tomato sauce, crushed garlic. Mix together until a good consistancy (not too sticky - use more rolled oats to bulk it out) then roll in a loaf shape in breadcrumbs.Easy and yummy.

one tube of sausage meat 500g mince one onion (finely chopped) 2 carrots (grated) corriander sweet basil salt / pepper curry powder tomato sauce Combine all ingredients together. Put in loaf tin and bake at 150 - 180 until cooked.
