Cheese souffle

Hi. Does anyone have a basic cheese souffle recipe? Can't seem to find one in any of my cookbooks.

greenberet, the following is from my 3rd Form Home Ec. class and is definitely a good basic cheese souffle recipe.....

CHEESE SOUFFLE
3 tbsp each ofbutterandflour
1 cup milk
½ tsp salt
pepper to taste
⅔-1 cup grated cheese
3 eggs

Prepare a roux sauce using the butter, flour, milk and seasonings.Allow the sauce to cool, then add the grated cheese.
Beat the egg yolks until thick and lemon coloured, then add the egg yolks to the cooled sauce.Beat the egg whites to a stiff foam, and fold in, carefully, the sauce.Pour the mixture into an ungreased dish and stand the dish in a pan of hot water.
Bake at160°Cfor45-60 minutes.:-))

i had cheese souffle at a restaurant recently that wasn't light & fluffy but more like a solid custard - sooooo delicious, but i don't know whether to achieve this you just omit egg white?
