Hi does anyone have any proven delicious recipes for cupcakes that use no eggs? :)

Sophie Grays Egg Free /& Optional Diary free cupcakes.
1 1/2 C S.R Flour, 1t Baking Powder, 1/2C Sugar, pinch salt, 50g Margarine, 1 C Milk, 1t of Vanilla Ess. Pre-Heat Oven to 190 C - not fan bake Grease mini muffin tins or line with paper cases. Sift dry ingredients into a bowl. Melt the Margarine, add the milk & Vanilla & fold into dry ingredients. Bake for 10-15mins or until they spring back when touched lightly. If you want dairy free option use non dairy spread & rice or soy milk.

I should also add, tried and tested recipes would be best as these are for a gift. Thanks suie, will note that one down.
