1 1/4 cup flour, 2 tsp baking powder, 1/4 cup custard powder, 1/2 cup sugar, handful of sultanas, 60gr melted butter, 1 lightly beaten egg, a few drops of lemon essense, approx 1/4 cup milk, a few tsp jam.
Place sifted dry ingredients into med bowl. Add sugar and sultanas and give it a bit of a stir to combine. Make a well in the centre and mix in melted butter, egg and essence. Most of it should come together into a ball but don't worry if it doesn't - it'll be okay!! Slowly stir in the milk. (Adjust quanity if you need to - the mix should hold its shape when it is scooped up, ie: not sloppy.) Using a tablespoon, scoop out onto a baking paper lined tray. Place a small blob of jam on the top of each and a sprinkle with sugar. Bake at 180 for about 15 - 20 mins. Test by lightly touching the tops - should be firmish and lightly browned. Makes 7-8 buns.

NZR Classic from the days of Rail Travel and Refreshment rooms: hails from Clinton South Otago FIRST RECIPE 3 0z butter, 3/4 cup sugar, salt, 2 beaten eggs, sultanas, 2 cups flour, 2 teaspoons Baking Powder, 1/2 cup milk, vanilla. sprinkle sugar on top and "bake in hot oven"200?
2nd RECIPE 3 Cups flour, 1 cup sugar, 2 eggs, 2 heaped teasp baking powder 4 oz butter, sultanas Milk to mix to a stiff dough sprinkle with sugar on top and bake at 375so 180 - 100?)
In the days where everyone baked and knew the routine instructions were less detailed. Remember them from when little and yes they are YUM. Happy baking.

no rock cakes are different, they have no custard powder and lemon essence Rock cakes • 1 1/2 cups (225g) self-raising flour • 1 tsp baking powder • 115g unsalted butter • 115g sultanas • 50g mixed peel • 75g caster sugar • Grated zest of 1 orange • 2 eggs
•Preheat the oven to 200°C. •Sift flour and baking powder into a large bowl, then rub in the butter until it resembles breadcrumbs. Stir in fruit, sugar and zest. Add eggs, stirring together, until you have a stiff dough. •Place walnut-sized mounds of the mixture on a greased baking tray, leaving space for spreading between each one. Bake for 15-20 minutes until golden brown. Cool on a wire rack

Actually with the jam on top they made me think of raspberry buns that we used to make at school but I don't think they had sultanas or custard powder in them
