I like to put my brie into a chicken breast or similar with some apricot chutney or sauce. Wrap the whole lotin bacon to hold it together and then bake.Yum!

Sift the flour, baking powder, salt and mustard into a bowl. Toss through the smoked chicken, avocado, grated cheese and half of the brie.Make a well in the centre.

They are delicious. I have not made them in ages...methinks i need to get some brie and smoked chicken. You can also do them as a mini muffin as well.

Muffins in the oven and some gorgeous grey tea brewing, time to sit in the garden and admire the blossom with a cuppa.
