Either in the oven or fry pan on low heat. Never dry. Don't need much cooking.

I would pan fry them really hot - then let them rest to finish cooking. Low heat must dry them out no end.

Covered in the oven, sitting on a bed of onion and sometimes apple.Then I give a bit uncovered, 5 or so mins at the end to colour them up. My pork chops are the best.

cover with plain yoghurt then breadcrumbs - stay lovely and mosit every time

Pan fried here too or done on the BBQ.
