Lamb Chops

We are having lamb chops for dinner tonight :)
How do you make yours?
I would BBQ them, but its not that nice out today.

I am stuck for ideas

i usually breadcrumb with half stuffing mix and half breadcrumbs

They are leg chops if that makes a difference?

leg chops they arent lamb by the way..... mutton ones so just at 150c for 1/2 hr turning over once just salt & pepper sprinkles just not to be red in middle ok

Haha my bad lol, just called them what the supermarket said they were.

Score/cut fat side of lamb chops to prevent curling up on the edges.. season with salt and ground black pepper.Sear both sides of lamb chops on cast iron frypan with 1 tbsp olive oil over medium / high heat.Do this ahead of time and set aside...
Later when ready to serve, roast lamb chops in oven at 180c for 6-7 or so minutes.Remove from oven and spread each chop on both sides generously with dijon mustard and fresh herbs pressing in to adhere to the lamb.Roast for 2 minutes more. Herbs should be a mix of fine chopped fresh thyme, oregano, rosemary and parsley..
Store bought will do at a pinch...
