Yep thats fine - I'll probably fan bake to ensure heat is even through the oven.

Either fan bake or bake would be fine.. if fan baking, have the oven temperature 10°C lower than the recipe as the heat is fanned through the oven.
Use the same cooking time and method as when making one.. I made a double recipe last night, and made it into 9 individual pavlova's.. yum!
