Light large fruit cake recipe

I know it has probably been asked a thousand times before, but does anyone have a recipe for a delish light coloured fruit cake please. Also does the light variety keep well?

rainrain1, that one from juliewn,s recipe is quite light in comparison to a few others hence a very good recipe to compliment the others..... especially enjoyed by those whom don't normally like eating fruit cakes - they do eat this one though.

Just wondering if a "Dundee Cake" may be worth looking at.

Dundee Cake

250g butter
1 c soft brown sugar
4 eggs lightly beaten
1/3 c combined orange & lemon Peel
1 c raisins
1 c sultanas
1/4 c glazed cherries chopped
1 1/3 c currants
1 c almond meal (use ground almond)
3/4 c slivered almonds
1 1/2 c flour
1/2 c self raising flour
2 tbsp rum
1/2 c whole almonds for decorating

Prehest oven 150c.
grease 20cm round tin and line tin with paper greased.
Using electric beaters, beat butter and sugar until light and creamy.
Add eggs gradually & continuing beating thoroughly after each adition.
Add peel, fruits and nuts.
Then using a metal spoon, fold in sifted dry ingredients alternately with a liitle rum.
Stir mixture until combined and smooth.
Spoon into lined tin and smooth top.
Arrange whole almonds on top.
Bake 2 to 2 1/2 hours or until the skewer comes out clean.
Leave in tin to cool several hours before turning out.

Sadly neither of us like the flavour of almond.I appreciate your replies though, and still love your stirfry sauce the best :-)

Perhaps alter the almond..... that is, change the almond part to another nut that one may prefer......

Most nuts can be grounded to suit.

Just thoughts.

This one is very light and absolutely beautiful!
Light Fruit Cake

¾ lb flour½ lb butter1lb mixed fruit
½ lb sugar3 eggs1 tsp baking powder
1 cup water1 dsp cornflour
½ tsp each of lemon, almond, rum & vanilla essence

Make a sauce of cornflour & water on a med heat and let cool. Add alternately with sifted baking powder & flour to beaten eggs sugar & butter. Add fruit & essences.
Bake in a moderate oven (180oc) appx 1½ hrs
