I want to cook a greek stew - cooking time 50 minutes - for someone who is gluten intolerant. If I can, are there any other changes I should make to the recipe?

It should be fine. Best to use a variety of rice that holds its shape and doesn't go sticky - Arborio or Calsparra would be good, or well washed Basmati.
