Gluten free carrot cake

Hi I would like to make a gluten free carrot cake. Could I just substitute standard flour for gluten free baking flour? Cheers

I use half GF flour and half almond meal. I find GF flour on its own is too gluggy and adding almond meal gives it texture. You can also add xanthan gum as well so might want to do some research on it but I have never used it.

I make this carrot cake very occasionally, which is really nice, I am not sure if it is gluten free or not.

Carrot Cake

3 eggs
1/2 cup light flavour olive oil (or melted butter)
1 tsp vanilla essence

1 1/2 cups grated carrot
3/4 cup almond flour
1/4 cup coconut flour
1/2 cup Splenda (or equivalent other sweetener)
1 tspn baking powder
1/2 tspn baking soda
1 tspn cinnamon
1 tspn mixed spice
1/2 tspn ginger
1/2 cup roughly chopped walnuts
1/4 cup sultanas (optional)

•Beat first three ingredients together
•Add the grated carrot and dry ingredients and mix until combined
•Bake for approx 35 minutes at 180C (or 350F) in a loaf tin.

Ice with:

Soften half a packet of cream cheese. Add the grated zest of a lemon and a little sweetener to taste.
