Possibly your mixture could be a little too wet, try cutting back on the liquid a bit. There is a thread on here for a Nigella banana muffin recipe and they are the best tasting banana muffins I have either made or had anywhere else. They are really fluffy, not dry like some muffin recipes I've tried. I've posted the link to the recipe for you and bumped the thread. http://www.nigella.com/recipes/view/banana-muffins-876
