I just thought I would share this recipe that popped up on my Facebook page today.I made it for lunch today- I added some bacon as well to it and it was very yummy.I made it in a bigger roasting dish so it was shallower and cooked up quicker - took about 30 minutes to cook.

sweetcorn fritata type of thing. Sounds good. Very full of fibre. Baking day tomorrow, I may try making it while I"ve got the oven on for other things.
