Can you make white sauce useing corn

praxis2, yes cornflour can be used for white sauce although I have never used it myself for a roux method(i.e. melt the butter, stir in the flour, cook then add the milk) sauce; however until I learnt how to make white sauce that way at Manual Training 40+ years ago my Mum and most other cooks then made white sauce by simply heating the milk and thickening it with either flour or cornflour, and then added a knob of butter to the cooked sauce.

Yes, you can, but it's not as nice as with flour, unfortunately.

White sauce made with cornflour and cooked in the microwave:

1 1/2 cups milk
a knob of butter
1 heaped dessertspoon cornflour
a shake of pepper and salt.

Put all ingredients in a microwave proof jug, cooked for 1 minute on high, take out of oven and stir well with a whisk, cooked again for a further minute and do the same thing. Check to see if the sauce needs any further cooking, may need another 30 seconds, remember to whisk. If the sauce is a bit thick add a wee bit of milk.

I prefer to make white sauce and custard in the microwave, for the best results, Good luck
