do you have sour cream?from mackenzie2 - from trademecooks by245sam Best banana cake recipe ever
3 eggs; 1.5 cups sugar; 1/2 cup oil; 3/4 cup sour cream; 3 ripe bananas;
2 cups white flour; 1.5 tsp baking powder; 1.5 tsp baking soda
Beat eggs and sugar,
then add oil, sour cream & bananas beat all,
then add flour, baking powder and baking soda
Beat till nice and smooth bake 170 degrees for 1 hr.
(In either a high sided 22inch tin or in a larger square.)
ice with white and dark chocfrom post "Now the icing I have been using Bakels chocolate truffle which you heat in the microwave for 90 secs and use it is just wonderful I don't know if you can buy yet in shops but check with your local Crean or Foodstuffs store and just ask to buy under a cash sale agreement (Usually a/c only) this stuff is just wonderful you can reheat 100's of times available in white and dark choc and I just drizzle both on top, looks amazing "

Banana Chocolate Chip Mini Loaves (adapted from Julie Le Clerc recipe)
3 ripe bananas, mashed ¾ c sugar 1/3 c rice bran oil 1 egg 1 tsp vanilla 2 tbsp milk 1 ½ c flour 1 tsp baking powder 1 tsp baking soda 1 c chocolate bits
Combine mashed banana, oil, egg , sugar, vanilla and milk Stir in dry ingredients, mixing only just to combine Spoon into mini loaf tins (8 mini loaves?) Bake at 180c for 18-20 minutes

Banana coconut loaf - uses 1 banana (was posted by fishaboy who said'Good base recipe to add other bits to it.')
1 mashed banana, 1 cup self raising flour, 1/2tsp cinnamon, 1 cup coconut,
3/4 cup caster sugar, 3/4 cup milk
Mix all dry ingredients together,
then mix the milk and banana together and add to dry ingredients.
Bake 35 mins at 190C.

Yes definitely you can make it with marg. I have done so for years, and am renown for my banana cakes. My recipe is the Edmonds book one, I use heaps of banana's, I think the recipe is 2-3 depending on size I have used 3-4, sometimesdirect from the freezer, and my banana cakes are beautifully moist.Important to make sure the soda and milk froth well. Secret with banana cakes is to not overcook, press the centre till it just gently springs back, and test with a skewer inserted in the centre. Good luck and enjoy.

Totally agree with Kinna, I have done the same for years as well and everyone loves my banana cake and loaves. I double the recipe and make one cake and one loaf.

Butterless Banana Cake :
1.5 cups of plain flour 3 teaspoons Baking Powder 1 teaspoon Baking Soda 3/4 cup of sugar
Sift into large bowl, then add :
2 eggs (lightly beaten) 1/2 cup oil (I use Olys or Rice Bran) 3 mashed bananas
Mix and pour into a lined cake tin. Bake at 150 C for 1 hour. 15 Prep time - and it's lovely! Ice with icing of your choice.
Just made this one for the 1st time and will do so again. Just add more banana!

Whizz cake BANANA CAKE - No melting, no mashing, and no creaming. Place in kitchen whizz: 1 1/4 cups sugar, 100gr butter, 1/2 cup milk, 2-3 bananas, 2 eggs, 1 tsp vanilla and blend till smooth. Add: 2 cups flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt. Bake in lined 23cm tin in moderate oven 40-50 minutes until cake springs back when touched. Leave in tin 5-10 minutes before turning out. Sorry didn't note the original poster, I use oil instead of butter with no problem & have also used GF flour successfully.

Yep, in fact I think the marg is better. I often bake with marg. Good ol Edmonds with an extra banana is still a goodie.
