be appreciated. Have just taken one out of the oven and the mixture looks far too runny. I have to take a dessert to a dinner next week and thought I would make a pie to take. Will taste it tonight, but in the meantime someone may be able to help with a fail proof recipe. Thanks

very yummy 200gms or so of sweet pastry.

FILLING
400g can of condensed milk
1/2 c lemon juice
1 Ts leom rind
5 egg yokes

MERINGUE
5 egg whites
1 1/2c caster sugar

roll pastry and line the dish chill for 30mins, then bake blind for 20minutes @ 180 untill golden

now for filling mixx all ingredients 2gether and pour into cooked shellpour into cooked shell.

meringue beat egg whites untill stif peaks form gradually beat in sugaruntill mixture is glossy pile over lemon filling
back in a low oven for 20-25 mins @ 130-150

sooo yum very sweet though a jo seager fav

or... the edmonds one out of there cock book is nice i use lemon juice in my pastry instead of water when making it

ThanksI never thought of Jo Seagar, but I am not sure about the condensed milk. It sounds so nice but oh so sweet.

Lemon Meringue Tart or try trademecooks.net.nz Line dish with puff pastry, cook quickly until light brown. Filling: 2c water, 2 lemons, 2TBSPs cornflour, 1c sugar, 2 eggs, 1TBSP butter. Put water, sugar, butter, grated rind & juice of lemon into a saucepan. Bring to boil, thicken with 2TBSPs cornflour, pinch salt & beaten egg yolks. Boil apporx 5 mins, allow to cool before filling the pastry case. Finally whip 2 egg wites till stiff, add 3TBSPs sugar & place on top. Return to oven to brown slightly.

This one is similar to above 1 packet of superwines and 100g butter. Whiz together and put in tin and refrigerate. 2 tins Condensed milk, 1 c lemon juice 5 eggs yolks - Mix together.
6 egg whites and 1 c cater sugar - 1/2 tspn cream of tarter (add slowly) beat till peaks form. Bake 20 mins @ 180 degrees till golden. Very rich but so so yummy

Castor sugar it should read... . I found this is runny after coming out of the oven. But after a night in the fridge it was delicious.
