Mine is

Line pie plate with short pastry and blind bake for 20 mins.Mix together
1 tin condensed milk
juice and rind of 2 lemons (min 1/2 cup)
2 egg yolks.
Pour this into the partly cooked crust then top with meringue.Bake for another 20 - 25 mins 180 until nicely browned.

Meringue
Beat 2 egg whites until stiff then gradually add in 1/2 cup sugar beating continuously.Pipe or spread over lemon base.

I made one of these last weekend - it was devine.
