Baking without butter thread?

I am boycotting butter!!!I refuse to pay the price that we do for it so now I am on the search for baking recipes that dont have it in them!
First one I will share:
Cream cake:
2 eggs, half tsp salt, cream, 6oz self raising flour, 3/4 cup sugar.
Break the eggs into a cup and fill with cream.
Beat well with salt and sugar - add sifted flour and bake for 20 min in a moderate oven.Can be made into patty cakes or 2 x 8inch sandwich tins.
Variations: Grated rind of orange, coffee, cocoa...Cherries even.
This is a no fail cake - it has worked every time I have made it and is deliciously light.I never use self raising flour - always add the bp to plain flour.

Cream BIscuits:THis has just been given to me by my sister - am baking them now.
1 cup sugar, 1 cup of cream, 2 tsp bp.Mix together and leave for a couple of minutes.Then add 2 cups flour - mix then roll out and cut into shapes - bake in moderate oven.
As I said - am baking these now so will update you on the end result.It did make a lovely soft biscuit dought though.

The cream biscuits turned out lovely but next time I ouwld add coconut or try another variation.Note too - add just less than 1 cup of cream - see how the dough forms before adding more.

This brownie has no butter, oil or eggs but still has the rich fudgy taste. Can't recall where I found this, so apologies to whoever may have originally posted it.

Brownie
1 cup apple puree; 1/3 cup cocoa; 3/4 cup SR flour; 1/2 tsp baking soda; 1/2 cup sugar; 1/2 tsp salt; 1/2 cup dark choc chips; 3/4 cup chopped walnuts.
Gently stir together first 6 ingredients (don't over mix). Fold in chocolate & nuts. Bake in 20x20 sprayed/lined dish 175C 25-30 mins till centre set & fudgy. Cool 5-10 mins then turn out. Cool, slice & keep in airtight tin. Dust with icing sugar before serving.

Out of curiosity and before I post recipes that may not meet the criteria, do you think that oil is also too expensive to cook with as well?

Hi BUzzy - no - I think there are some pretty decent priced oils to be had.Besides the point of this is just to boycott butter till they find theyre not selling enough and maybe bring the prices down again!!Yeah - I know - this isnt likely to happen but we all have to make a stand in even just a small way!

Chocolate cake
(Think it is the Chelsea one)

whisk 3 egg whites (I often put in more)

2 cups caster sugar
3 cups self-raising flour( mix together)
1/2 cup cocoa
2tsp baking soda

1 1/2 cups oil
2 cups milk (add tblspoon vinegar to milk)
2 tbs golden sryup
2 tsp vanilla

Add wet & dry mixtures together, fold in egg whites
bakesat 180 degrees in thefor about 40-50 minutes depending on oven.

This usually makes two cakes which is great as you can freeze the second to use later! It is a lovely soft & moist cake but still sturdy enough for icing etc.

ALMOND AND LEMON CAKE

4 eggs, separated
155g caster sugar
Finely chopped zest of one lemon
50g flour
150g ground almonds
3 T finely diced crystallised lemon or 2 T candied peel
Icing sugar to dust

Preheat oven to 180c. Butter and line with baking paper cake tin

Beat egg yolks, sugar, and zest until thick and creamy

Stir in flour almonds and peel

Beat egg whites until stiff and fold in to other mixture.

Pour into tin and place in oven for 30 mins or until cooked

Remove from oven and cool before removing from tin – dust with icing sugar.

Almond Cake

(serves 10 - 12

)

100g sr flour

300g whole almonds with skin

10 eggs, separated

300g caster sugar

zest one lemon

1/2 tsp baking powder


cream to serve



Heat oven 160C.Line 30cm tin.

Grind almonds in processor.

Whisk yolks & sugar until thick & pale.Beat whites until very stiff.Fold together, fold in almonds & zest.

Sift flour & bp, fold in.

Bake 60 - 90 min until skewer comes out clean.

Coconut and Rapsberry cake

6 eggs
225g castor sugar
190g ground almonds
80g coconut threads
1 heaped tsp baking powder
300 g raspberries or any berries you like

Just use a hand whisk. Beat together eggs and sugar till combined. Add all dry ingredients and mix in. Fold in the raspberries. Bake in a 180c oven for an hour. May take longer depending on your over. Use a 20cm lined cake tin.

This is a real easy loaf recipe.
Easy 5 Cup Loaf
1 cup self-raising flour
1 cup brown sugar
1 cup coconut
1 cup sultanas
1 cup milk
Mix all ingredients together in a bowl.
Pour into tin.
Bake in 180' oven 40-45 minutes
Enjoy!

I could never replace it with a man made oil </3

Many of the oils I buy cost 3x that of a block of butter.

So I will gladly take your share of the butter left on the shelf <3

I have an easy peasy one - have made it many times, especially good when the cupboard it looking bare as it doesn't need butter or eggs.

In a bowl mix together 1.5 cups flour, 1.5 tsp bp, 1.5 cups coconut, 1 cup sugar, 1.5 cups milk, 1 tsp vanilla essence. I often add a couple of tablespoons of cocoa powder for a change. Bake at 160-170 deg C for an hour or so.

Butter and eggless cake
2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup mayonnaise or salad dressing
1 cup cold water
1 teaspoon vanilla
Chocolate Icing
How to make Eggless Butterless Cake
Stir together flour, sugar, cocoa, baking powder, and soda.
Combine mayonnaise, water, and vanilla.
Stir mayonnaise mixture into dry ingredients; beat till blended, about 2 minutes.
Pour batter into greased and floured 9x9x2-inch baking pan.
Bake at 350° till done, about 30 minutes.
Cool thoroughly.
Frost with Chocolate Icing.
Sound interesting!

Another Loaf.
Soak 1 cup of dried fruit and 1 cup of sugar in 1 cup of TEA, for a couple of hours.
Add 2 cups of flour and 1 tsp of baking powder. pnch of salt.
Mix together and bake at 150 for an hour.

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
3 tbsp. cocoa
1 tsp. vanilla
1 tbsp. vinegar
5 tbsp. oil
1 c. water

Sift together flour, sugar, baking soda and cocoa. Add vanilla, vinegar and oil. Beat until smooth. Pour into ungreased cake pan. Bake at 350 degrees for 35 minutes.

I haven't used this advice myself but I thought it was definitely worth keeping in mind in case I ever needed/wanted to substitute oil for butter.....

"make all my muffins with oil instead of butter now. My rule is for every 50g butter use 40ml oil. I use rice bran or canola oil now as it is apparently healthier but I guess you could use olive.

Butterless Banana Cake :

1.5 cups of plain flour
3 teaspoons Baking Powder
1 teaspoon Baking Soda
3/4 cup of sugar

Sift into large bowl, then add :

2 eggs (lightly beaten)
1/2 cup oil (I use Olys or Rice Bran)
3 mashed bananas

Mix and pour into a lined cake tin. Bake at 150 C for 1 hour.
15 Prep time - and it's lovely! Ice with icing of your choice.

Quick and easy Saltana Cake
I was given this last week and made it yesterday it yum.
1 kilo Saltanas
600mls Chocolate Milk
2 1/2 Cups self raising flour
Soak saltana in chocolate milk over night.
Mix 2 1/2 cups self raising flour.
Bake in a oven at 150c for about 45
mins this may differ in ovens just keep a eye on it. ITs Great NO Butter or Sugar.
Next time I am going to try it with wholemeal flour.

Easiest Chocolate Cake
-No Beating, No Eggs
This chocolate cake is moist, cheap and easy to make. Great for large families.
3 cups flour,
2 cups sugar,
6 tabs cocoa,
1tspn salt,
2 tspns Baking Soda,
1 tspn Vanilla,
3/4 cup Oil,
2 tabs Vinegar,
2 cups water.
Mix all ingredients together and bake in oven tray or similar dish at 180 for approx 30mins.
Ingredients sound weird but it is absolutely brilliant, very tasty and moist, my 10 year old makes it.

3 Ingredient Pineapple cake
is wonderfull Finally got around to making it, it sure tastes wonderfull.. for those who havent tried..

2 cups self raising flour,
1 cup sugar, one 450 grm can crushed pineapple.
MIx wet into dry.. I needed about a tablespoon extra water.
Bake in a ring tine at 180- 35-40 mins. Yummmy

Basic Muffin Mix

Bowl 1
4 tsp BP
2 C flour
3/4 C Sugar

Bowl 2
1/2 C Oil
1 C Milk
1 egg

Add bowl 1 to bowl 2.
Just mix.
200 for approx 15 mins

Add cocoa, friut etc as you wish:)
