yup, the betty crocker box at the supermarket LOL but in my defence this is the only type of muffin I dont make from scratch

Alison Holst has a good one, and her trick is to poke the frozen blueberries into the muffins once you have the mix in the pans.That way you don't get them bleeding all over the mix.

:)...remember to use the tip she gave - in a radio interview - especially when using frozen berries, which are wetter.

Here is one that was in this weekends Sunday Star Times and was made for Beyonce and her husband JayZ while staying at Mollie's Boutique Hotel in St Mary's Bay Auckland

Annabelle White noted that they tested the recipe and used Champion self raising flour and one teaspoon baking powder instead of what is listed below and it makes a deliciously cake like muffin-so no need for butter

Fresh Blueberry Muffins

2 cups flour
1 Tablespoon baking powder
3/4 cup brown sugar (not tightly packed)
3/4 cup melted butter (cooled)
2 large eggs
3/4 cup milk
2 cups blueberries

Sift the flour and baking powder, add sugar
ln another bowl combine the melted (cooled) butter, eggs and milk
Blend with a fork
Add to dry ingredients with the blueberries
Bake 200C for 15 minutes, or if you prefer, fan bake at 200C for 10 minutes then turn of the fan and bake for another five to eight minutes
lf you use frozen berries it will take longer to bake
Keep an eye on them as fruit muffins go from perfectly cooked to over-done in a very short time at this temperature
Serve dusted with icing sugar

I got this one off a wee book that a blueberry grower gave me years ago when I bought them, I think it was from the blueberry council or something.
2 cups flour, 1 tablespoon baking powder
2 tablespoons custard powder
1 cup sugar, ¾ cup blueberries (I used frozen)
2 eggs, 3/4 cup milk, 3/4 cup oil

Sift flour, baking powder, and custard powder. Add sugar and blueberries.
In a seperate bowl mix eggs, milk, and oil.
Combine wet ingredients with dry ingredients.
Spoon into prepared muffin pans and bake at 190°C for 15-20 minutes.
It makes 12 muffins.
The custard powder gives it an interestingly different flavour.

Dezzie that is a great recipe, just made some and they are really nice, hubby says best i have made.
