I have made soup (added veg stock, onion and curry powder) but I found the texture a bit slimy. It wouldn't be my first choice way to use up a surplus.

I generally cook them up with chopped onion, chopped tomato, S & P, basil, touch of sugar, maybe balsamic vinegar and then add browned chicken and let it all cook down.so good.

Grate zucchinis, dry in a t-towel and use as thickening in stews or sauces, or with cheese & bacon or capsicum, in a muffin recipe .
