I joined Carolyn's classes two weeks ago and each week she does a recipe in class. Here's the recipes she's given out this year.
Beetroot, Carrot, Celery & Toasted Seeds tossed in a Balsamic Dressing For one serving: 1 small fresh beetroot 1 carrot 1 stick celery, ver finely chopped 2TBS mixed seeds, toasted (pumpkin, sesame, sunflower) handful parsley, chopped PLUS Protein of your choice Balsamic Dressing - make a jar full and serve 4 tsp per serving 1/4 cup oil 1/4 balsamic vinegar 1/4 cup water 1 tsp dijon mustard salt and gound black pepper Method: Peel and grate beetroot and place on serving plate Scrub and grate carrot and place on top of beetroot Top with chopped celery Sprinkle toasted seeds over top of salad Mix dressing ingredients together and pour over salad Top with the protein of your choice and scatter with parley KISS allowance per serve 1 protein = of your choice 1 fat = oil 1 daily indulgence = seeds

Rock into Summer - with this Rock Melon Fusion
For one serving 1 cup of rock melon - cut into cubes 125gms cottage cheese (plain) 1 TBS crystallised ginger, chopped 2 TBS brazil nuts - chopped
Method Toss rock melon cubes into a bowl Spoon cottage cheese on top Scatter with crystallised ginger Top with chopped brazil nuts
KISS allowance per serving 1 Protein = cottage cheese 1 1/2 Fruit = melon and crystallised ginger 1 daily indulgence = brazil nuts

Red Ripe Tomato Tart dotted with chunks of Feta and fresh Basil Leaves
For 4 servings 1 sheet puff pastry 4 tsp basil pesto 6 tomatoes cut into slices 200gms feta, crumbled into chunks salt and ground black pepper fresh basil leaves for garnish (optional)
Method Pre-heat oven to 210C Line a oven-tray with baking paper and lay sheet of pastry on top Cut an indent, about 2cm in, around the edge of the pastry Brush pesto over the centre part of the pastry Overlap the sliced tomatoes in rows down the pastry Dot the tomatoes with feta cheese and season with salt and pepper Bake at 210C for 15-20 minutes or until pastry is crisp and golden. If the pastry begins to burn cover with tinfoil. Serve garnished with freshly picked basil leaves
KISS allowance per serving 1 Protein = feta cheese 2 Carbohydrates = pastry 1 Fat = pesto

This was tonights recipe and God it was good
Chicken tossed in Quinoa, Toasted Pine nuts and bejewelled with Pomegranate seeds
For one serving 1/4 cup uncooked quinoa 100gms cooked chicken, diced 2 TBS mint, chopped 2 TBS parsley, chopped 1 TBS pine nuts, toasted 1/4 of a pomegranate
Lemon Dressing (Use 3 teaspoons) 1/4 cup oil 1/4 cup lemon juice 1/4 cup water salt and ground black pepper
Method Cook quinoa in lightly salted water for about 12-15 minutes Drain well and allow to cool In a bowl combine quinoa, chicken, mint, parsley and pine nuts Combine dressing ingredients in a small jar and spoon 4 teaspoon over the salad - toss to coat Turn salad onto serving dish and scatter with pomegranate seeds
KISS allowance per serving 1 Protein =chicken and pine nuts 2 Carbohydrates = quinoa (note 2 TBS = 1 Carb) 1 Fat = 3 teaspoons dressing 1 Daily indulgence = pine nuts

CHICKEN AND MUSHROOM FETTICHINI IN A MUSHROOM SAUCE For 4 servings: 480grms chicken breast, skinned boned and sliced 2tsp of oil 3cups mushrooms sliced 1leek, chopped-or 1 onion s&p 1/2 c white wine 1/2 c water 1 tsp chicken stock 4Tlbspns sour cream 400grms Fresh Fettichini Handful of parsley, chopped . heat oil in a nonstick pan and saute chicken until cooked and lightly browned add mushrooms, leek, s&p.cook until lightly tender mix together the wine, water and the chicken stock. add to the pan and stir on a gentle heat until it comes to the boil. simmer 10 mins turn down the heat and fold the sour cream into the chicken cook the fettichini while the chicken is cooking place fettichini on serving dushes and spoon the chicken over the top. garnish with chopped parsley.

South of the border tacos For 4 servings 240 grms lean beef mince 1 small onion finely chopped 1tsp mexican seasoning 4Tlbspns tomato paste s&p 8 medium tortillas 8 tsp oil-use 1 tsp per tortilla Taco Filling:-share in small bowls lettuce, finely chopped 100grms tasty chedar cheese, grated carrot grated tomatos, finely chopped . heat a nonstik pan and saute the mince& onion until meat is lightly browned add mexican seasoning, tomato paste, s&p and continue stirring until the for about 5 mins heat 1tspn oil in a pan and quickly fry the tortilla until lightly browned on both sides repeat with the following using 1 tsp oil per tortilla. fold tortillas and place on a serving plate. To serve-place the lettece on the bottom of the folded tortilla, Top with cheese, mince, carrot and tomatoes
