Almond icing question

I'm not making my xmas cake until 2 or 3 days before xmas as it has no alcohol in it etc.Richard Till says to make his almond icing a week early so the flavours develop, so if I make that first and wrap it in gladwrap or tinfoil it should stay soft until later next week shouldn't it?

It should be OK, just wrap in gladwrap & store in the fridge. I alwaysgrind my own almonds and then make the almond paste just before using it.

Dont store it in the fridge just some place cool because if you take it out of the fridge it will sweat and go sticky. Wrap it in gladwrap and store in an air tight container
