Almond Shortbread

Has anyone got a nice Almond Shortbread recipe please?.I only have the one from the Christmas Edmonds Cook Book.Or any other Christmas cookie ideas would be really great!!

Maybe try taking an amount of flour out and replacing it with ground almonds using a fav recipe you have:)

45 biscuits

Ingredients
300g (2 cups) plain flour
40g (1/4 cup) icing sugar
50g (1/2 cup) ground almonds
225g chilled unsalted butter, cubed
1 egg yolk
1/2 teaspoon vanilla essence
Icing sugar, to decorate

Method
Preheat oven to 180°C

Place plain flour, icing sugar, ground almonds and butter in the bowl of a food processor and process to combine. Add egg yolk and vanilla essence, and process until all ingredients just form a ball. Cover with plastic wrap and refrigerate for 30 minutes.

Divide dough into 4 equal portions. Roll out one portion between two pieces of baking paper to about 8mm thick. Cut into desired shapes (such as starfish or stars) and place on an oven tray. Repeat with remaining dough portions. Bake in preheated oven for 10-15 minutes or until beginning to colour and cooked through. You may have to cook them in 2 separate batches. Cool on a wire rack and sprinkle with icing sugar.
