noddy26 - the only way to increase the healthiness of one juice over another is to press it fresh and drink it straight away. As it's going to be cooked anyway - it's really just a question of taste.

You've got enough sugar in your dried fruits. Don't need sugary juice too. Brandy adds wonderful flavour and plumps the fruit up beautifully. Then you can pour even more brandy over the cake once it's cooked. Great stuff!

What an excellent idea - you cannot be too careful, it would be tragic to spoil the fruit!

fresh squeezed orange juice or brandy as suggested. Can do half orange juice and half grand marnier. would be very yummy.

You dont have you use brandy, you can use bourbon, rum, kahlua, port, sherry.... but as mentioned above, you do need to take a few samples to make sure the flavour is spot on.

yeah well - which fruit juice is "healthy"? I would use rum myself - but brandy would do in a pinch I am sure :)

Lite Cranberry Juice, Diet ginger ale, also cold tea or maybe coffee. Have done the coffee and lite cranberry juice and is good.
