Hi, I'm making limonchello and as I only need the skin of the lemons, does anyone have any good ideas for useing up the juice? I plan to freeze some but... . .

i make lemoncillo too and juice the lemons and put them in ice trays until set then free flow them in bags until summer for gin & tonics or winter for lemon honey drinks.
