Preheat your oven to 200 C. Line a baking tray with baking paper.
Place almonds, sugar, egg whites, and vanilla extract in a food processor and pulse on medium speed until the mixture turns to a rough paste. Turn the food processor to high speed and blend the paste for a further 2 minutes, until the batter is thick and smooth. Spoon the paste into a pastry bag fitted with a wide tip and squeeze it into 8 small, 1inch mounds on the baking sheet. Allow the macaroons to rest, uncovered, for 15 minutes. Place the baking tray in the oven and bake for 12 minutes. Remove the macaroons to a wire rack and cool to room temperature. Dust with the icing sugar before serving.
You can colour them inpastel colours if you wish and sandwich them together with cream or ganache.

These little morsels are Macaron as opposed to Macaroons which are quite different in texture. I have always reckoned they will be the next big thing after cupcakes. In Melbourne, they have Macaron shops that sell every imaginable flavour.
