Yes, I am making this one heaps at the moment. Its a Tupperware one, so very easy. Simply plonk everything in a bowl, mix and pour into muffin tins (I use the paper cups inside muffin tins). It does help to sift the flour and cocoa as you get a smother finish. Here you go:
2 cups flour, 1tsp baking powder, 2tsp baking soda. 1/2 cup cocoa, 1 3/4 cups sugar, 1tsp vanilla essence, 1 cup milk, 1tsp vinegar, 2 eggs, 1/2 cup oil, 1 cup cool coffee.
Bake 15-20 minutes at 180C.
These are really moist and very yummy!

Chocolate Caramel Muffins (Jessie981)
1&3/4c flour, 1tsp b/soda, 1c sugar, 1/4c cocoa. Melt 100gr butter. Remove from heat & whisk in 1 egg, 1c milk & tsp vanilla essence. Add to dry ingredients. Mix gently. Spoon 1/2 of mixture into muffin tins. Add heaped tsp (or more) of caramel condensed milk & put remaiing mixture on top. Bake 15 mins @ 220. Makes 12.
