What is it. I am making caramel and the receipie is sugar, water and liquid glucose. Havent seen any in the supermarkets. What does it do, and what is a good caramel recipie?

liquid glucose will help to stop crystallization (sp) when making caramel personally when making caramel we just caramelise some caster sugar and add cream I also find stirring the caramelizing sugar with an orange half stcuk on a fork gives a very nice added taste

Thanks guys, the orange on fork sounds like a brill idea. Found some glucose at binn Inn with the brewery stuff.
