First try out tonight with new gas hob & wok. Never done Stir Fry so have no idea what to use. Thanks

Here's a simple Thai recipe:
Spicy Chicken with Cashew Nuts
2 tablespoons peanut or other vegetable oil 2 cloves garlic, finely chopped 1/2 small onion, sliced 6-8 finger-length dried red chilies, seeded and cut into halves 1/2 cup roasted cashew nuts, 250 g chicken, cut into small cubes 1 spring onion, trimmed and cut into 1 1/2-in lengths
Sauce: 1 teaspoon light soy sauce 1 tablespoon sweet soy sauce 1 teaspoon fish sauce 1/4 teaspoon sugar or to taste 2 tablespoons water
Heat up a wok and add the oil. When the oil is heated, add the garlic, onion, dried red chilies and stir-fry until fragrant or when you smell the spicy aroma of the chilies. Add the cashew nuts and follow with the chicken. Stir-fry the chicken until the surface turns opaque. Add all the ingredients for the sauce into the wok and continue to stir-fry until the chicken is cooked. Stir-in the spring onion, serve immediately with steamed rice.

Here's a Malaysian one:
Ginger Sesame Chicken
Serves 4
450g chicken thigh meat 1 tab oil 2 tsp sesame oil 3 tab shredded ginger 2 tab dark soy sauce 2 tsp sugar 1 tsp salt ½ tsp black pepper 150 ml chicken stock 2 tab Shaoxing wine
Marinade:
2 tsp light soy sauce 1 tsp dark soy sauce 1 tab Shaoxing wine ½ tsp salt ½ tsp pepper 1 tsp sesame oil 2 tsp cornflour
spring onions to garnish
Cut chicken into 5cm chunks, mix with marinade, stand 30 min. Drain.
Heat wok and add oils, when smoking add ginger and fry 1 min until crisp. Add chicken and stir fry 5 min until it starts to brown. Add everything else but wine, stir fry 1 min. Reduce heat, cover and simmer 8 min. Remove cover and boil until sauce reduced to 2 tab. Add wine, stir fry 2 min. Shred spring onions and sprinkle on top.

Honey, soy, ginger and/or garlic is always good - you can also add sweet chilli sauce to spice things up - and 5 spice is a must for me too

Theres no rules really - just play around with flavours you like - pineapple juice with cornflour and honey is good too

Your recipes sound delicious. The Shaoxing wine, is that a rice wine?

Yes it is. It's a cooking wine and is salted. This means it isn't subject to tax as an alcoholic drink so it is very cheap - around $4 for a big bottle.
