COUNTRY GARLIC CHICKEN

8 chicken leg or thigh portions or boneless chicken breasts
3 tablespoons flour
1 tablespoon paprika
1/2 teaspoon ground white pepper
12 cloves crushed garlic peeled and thinly sliced
2 carrots peeled and sliced
2 parsnips peeled and sliced
1 tablespoon fresh rosemary leaves - steams removed
1 1/2 cups chicken stock or water

Cooking time low 6-7hours high 4-5hours

Preheat slow cooker on low for 15mins
remove skin from chicken if wished. Chicken can be cut into smaller chunks or left whole depending on serving arrangements.
Place chicken in clear plastic bag with flour paprika and pepper. Toss to coat.
*i always brown my meat in pan prior to putting in slow cooker*
Put the garlic, carrots and parsnips in the slow cooker. Sit the chicken on top and scatter over the rosemary leaves. season well with salt and pepper. Pour in the chicken stock and cover with lid.

serve the chicken simply with the sauce from the slow cooker with the carrots, parsnips and fav seasonal veges.

*Personally, I add a few rashers of bacon and also add a packet of onion soup to the clear bag when tossing the chicken for extra flavour*

CAJUN CHICKEN STEW

8 chicken leg and thigh portions
2-4 smoked chorizo style sausages, finely sliced
2 stalks celery, sliced
1 green capsicum sliced
1 onion peeled and sliced
400grm can diced tomatoes
1 cup chicken stock
1 tablespoon creole spice seasoning
1 tablespoon chopped fresh thyme

Cooking time low 6-7hours high 3-5hours

Turn slow cooker on low to preheat for 15mins
*i always brown my meat prior to adding to slow cooker*
Place all ingredients in the slow cooker.
Cook for time frame as above.
The chicken can be served in pieces or the meat pulled away from the bone portions and returned to the sauce in slow cooker. Yummy served on dirty rice.

HONEYED SHOULDER OF LAMB

3-4 parsnips peeled
3-4 carrots peeled
500gramms small waxy potatoes scrubbed
3-4 tablespoons medium to strong flavoured honey
2 tablespoons oil
1/2 teaspoon ground cinnamon
1. 5kg boned or rolled roast lamb
1 cup beef stock
3 tablespoons instant gravy powder

Cooking time low 6-8hours high 4-5hours

Pre heat slow cooker for 15mins on low.
Cut the vegetables into chunky pieces. If the parsnips core is tough cut it out.
Toss the parsnips carrots and potatoes with the honey oil and cinnamon.

Place lamb in cooker. Scatter the honey coated vegetables over and around the lamb.
Pour in the stock and add lid.
Cook for time frame as above.
Carefully remove the lamb and veges and serve on warm platter.
Make the braising liquid in the slow cooker up to 2 cups with the beef stock and place into a sauce pan with the gravy powder. Stir over moderate heat until thickened.

LAMB SHOULDER CHOPS IN PORT WINE JELLY GRAVY

1-1. 25kg lamb shoulder chops
2 onions peeled sliced thinly
2 tablespoons flour
1 cup beef stock
1/4 -1/2 port wine jelly, warmed.
1 tablespoon fresh tyme finely chopped
1 teaspoon cracked black pepper

Cooking time low 5-7 hours high 3-4 hours

Pre heat slow cooker on low for 15mins
Trim an excess fat off lamb chops and season well with S&P
*I always brown my meat prior to adding to slow cooker*
layer the lamb and onions in slow cooker.
Mix togeather the flour , stock, jelly, thyme and pepper to make a smooth sauce. Pour over the lamb and onions. Cover with lid.
Cook as per times above.
Pile into serving dish alongside favourite greens and mashed kumara. . mmmm

GARLIC & TOMATO PORK BRAISE

1kg boneless lean pork for casseroling
8-10 thick cut slices of pancetta
400grm can diced tomatoes
1 cup chicken stock
1 tablespoon minced garlic
1 tablespoon fresh rosemary

Cooking time low 5-7hours high 3-4hours

Preheat slow cooker 15min on low
cut the pork into 3-4cm pieces. Dice the pancetta.
*I always brown my meat prior to adding to cooker*
Place the pork and the pancetta, with any remaining oil from the pan (the pancetta would have given the oil a gutsy flavour) into the slow cooker.
Mix together the tomatoes, stock garlic and rosemary and pour into the slow cooker.
Cook for times as above.
Yummy served with parmasen and rosemary polenta and seasonal greens.

Just wonder if this breaking copyright rolznsp? Take care just in case.
I've got the book too and I'm looking forward to having a close look at it next week. Have you tried any of the recipes that you'd highly recommend? Thanks.

I wouldnt worry too much rolznsp. I would say a big percentage of recipes on here are from cooking books and Im sure it doesnt stop any of us from buying recipe books.
I use this thread alot and have recently bought 4 new books.
If anything Im sure if anything people would be more inclined to go out and buy the book because they like the look of the recipes you posted.

If you type SLOW into the search jobby at the top left, I and a few others have submitted (or commented on) a few of her recipes from this book. I would recommend it.
