HELP! I want to bake the cookie time cookies but I am out of vanilla essence - what can I use as a substitute? I heard you can use rum? ? ?

Never heard of that before. I know you can make your own vanilla essence with vanilla pods infused in rum. I'd probably just add some grated lemon or orange rind for a bit of flavour instead of the essence. Unless you have any other essence flavours (caramel maybe? )

there really is no good substitute for vanilla without altering the taste of the product you wish to bake.

Thanks guys - ended up using Orange zest as had no lemons or any other essence. worked a treat!
