This isn't the recipe you are looking for but it is still very nice and can be made in a slow cooker however can be a bit fidely as I take the meat out and pour the liquid into a pan (minus the fat) and reduce the sauce. It tastes very nice. I either use the chilli flakes OR 1 fresh chilli and it can get a bit spicy. Try it.

Pork Belly with Honey, Soy and Ginger

6 - 8 Pork belly strips
1 large brown onion cut in half and sliced
4 cm piece ginger – rough match stick slice. no need to peal.
2 large red chilles – sliced at an angle (use one as too hot for the kids and de seed it)
4 cloves garlic smashed and skin removed
1 cinnamon stick
1 tsp dried chilli flakes (don't use this if using fresh chilli)
1&1/2 tsp 5 spice powder
1 cup water
1 cup Chinese cooking wine
100ml oyster sauce
4 tbs soy sauce
4 tbs honey.

Put everything in a oven proof pot and bring to a boil. Remove from heat and put in the oven to bake for one and half hours at 170c. OR put everything in a slow cooker and cook for 4 - 6 hours till tender.

Remove meat from pot (if using slow cooker, pour into a pot). Skim off the fat and on high heat reduce the sauce by a 1/3. Pour over the meat and serve.

Uli... That last one looks good and what a good idea to use your vacuum machine with the meat and marinade... forces the marinade to permeate the meat better... but what is malt sugar? ? ?

malt sugar = maltose
