use a packet vegetable soup mix as a base if you don't have any stock. then just throw everything in.

I use a ham hock which I cook in the crockpot overnight. Next day, I remove it from crockpot and take off all the meat and remove any bits of skin or large pieces of fat floating on the top of the reserved liquid. To the liquid I add 1 litre of Campbells vegetable or chicken stock, 3-4 stalks of chopped celery ( including the leaves) 1 large onion, chopped. A can of chopped tomatoes, 1 tbsp tomato paste, 1-2 potatoes cubed, 1-2 kumara, cubed, 1 swede, cubed, 1-2 carrots, thickly sliced. I add the cut up meat and cook on high till vege are nearly tender. I then add 2-3 handfuls of either macaroni or spiral pasta ( you can also add canned red kidney beans of you wish) and plenty of freshly ground pepper to your taste. Keep cooking till pasta and vege are tender.
