Chocolate Raspberry Brownies

1/2 cup plain flour
1/2 cup self-raising flour
1 teaspoon bi-carb soda
3/4 cup cocoa
2 eggs, lightly beaten
1 1/4 cups caster sugar
1 teaspoon vanilla essence
1 ½ tablespoon sunflower oil
200g thick reduced fat vanilla yogurt
120g apple puree
200g fresh or frozen raspberries
icing sugar, to dust

Preheat oven to 180 Grease and line the base and sides of a 30cm x 20cm tin with baking paper.

Sift the flours, baking soda and cocoa into a large bowl and make a well in the centre.
Whisk together the eggs, sugar, vanilla, oil and yogurt in a large jug.

Add the flours and mix until smooth. Fold through the apple puree and raspberries.

Spoon the mixture into the prepared tin and bake for thirty minutes or until skewer comes out clean when inserted in the centre. Allow to cool for 5 minutes in the tin before turning out onto a wire rack to cool completely.

Hadn't thought of including raspberries - thanks. We've had some from a cafe where they insert a Jaffa lolly into the centre of each piece before baking - a tasty find when eating.

The raspberries help with a very rich brownie.
